버터 치킨, 전통적으로 머그 마카니(Murg makhani)로 알려져 있습니다. [m ʊr ɣ ˈ əːʰ니]]로 발음되는 인도 요리는 델리에서 유래된 것입니다. 닭고기에 양념 토마토와 버터(막한) 소스를 넣어 만든 카레의 한 종류입니다. 소스는 풍부한 식감으로 유명합니다. 토마토 페이스트를 사용하는 치킨 티카 마살라와 비슷합니다.[6]

역사

카레는 페샤와르 출신의 펀자브 난민이었던 [8]쿤단야기쿤단 구즈랄이 인도 분할[7] 이후인 1950년대 올드 델리다리간즈 지역에 있는 모티 마할 식당에서 개발되었습니다.[9][10][2] 이 카레는 버터(막한)가 풍부한 토마토 그레이비에 남은 탄두리 치킨을 섞어 "우연히" 만들어졌습니다.[11] 1974년, "머그마카니이(버터와 토마토 소스로 요리한 탄두리 치킨)"에 대한 레시피가 발표되었습니다.[citation needed]

준비

닭고기는 레몬즙, 다히(요거트), 카슈미르 적고추, 소금, 가람마살라, 생강 페이스트, 마늘 페이스트를 혼합하여 몇 시간 동안 재웁니다.

양념된 닭고기는 탄도어(전통 점토 오븐)에서 요리되지만, 굽거나 오븐에 굽거나 팬에 튀겨지기도 합니다. 버터가 포함된 순한 카레 소스에 제공됩니다. 소스는 토마토, 마늘, 생강을 베이스로 한 소스로 물이 많이 증발할 때까지 끓입니다. 보글보글하게 부드럽게 체에 거른 소스의 구성과 향신료에 많은 차이가 있습니다. 향신료로는 카다멈, 쿠민, 정향, 계피, 고수, 후추, 가람마살라, 페누그리크(펀자비/힌디: 카수리메티) 등이 있습니다. 캐슈 페이스트는 증점제로 사용할 수 있으며 최종적으로 고수로 고명을 칠합니다.
