힘베지스트(Light "raspberry Spirit")는 알콜 중독자, 과일 기반의 eau de vie[1], 또는 Schnaps로 주로 독일과 프랑스의 알자스 지역에서 생산된다.[2]

과일 브랜디(독일어로 Obstler)처럼 신선한 과일을 발효시킨 매쉬에서 술로 증류되는 것이 아니라, 힘베지스트(Himbeergeist)[3]가 주입으로 만들어진다. 산딸기의 저당류 함량은 제한된 양의 알코올만을 생산할 수 있기 때문에, 힘베지스트는 신선한 열매를 순중성의 95.6%의 정령으로 적셔 만들어진다.[4][5] 그런 다음 혼합물을 몇 주 동안 담가 산딸기 진액, 증류, 정제수로 희석한 후 40% ABV 이상의 강도로 병에 담근다.

힘베지스트 1리터를 생산하는 데는 약 17파운드(7.7kg)의 산딸기가 필요하다.[6]
