Matzoon[a] (Armenian: մածուն, matsun) or matsoni[b] (Georgian: მაწონი, mats'oni) is a fermented milk product of Armenian[1][2][3][4][5][6][7] origin, distributed in Armenia[8] and Georgia.[9][10][11] 일본에서 유통, 상용화된 이른바 카스피해 요거트는 맛존과 같은 종류의 요거트라고 하기도 하지만,[10] 미생물군과 점도를 비교한 결과 둘은 전혀 다른 것으로 나타났습니다.[12] Matsoni는 2012년 1월 24일부터 조지아에서 특허를 받았습니다.[13][14][15]
어원
제품의 이름은 Armenian matz(sour, glue)에서 유래되었습니다.[16] 어원은 그의 문법의 정의(11세기)에서 그리고르 마퀴스트로스에 의해 제공됩니다.[17]
역사
마츠온에 대한 최초의 기록은 그리고르 마츠트로스(11세기), 호반네스 에른스카치(13세기), 그리고르 타테바치(14세기) 등의 중세 아르메니아어 필사본에서 입증됩니다.[17][18] 마초니는 자자 파나케르텔리-치치쉬빌리의 15세기 조지아 의학서 카라바디니에 언급되어 있습니다.[19]
1929년 매사추세츠주 앤도버에서 "콜롬보 앤 선즈 크리메리"를 시작한 아르메니아 이민자 사르키스와 로즈 콜롬보시안은 아르메니아어 단어 "madzoon"이 새겨진 말 drawn 마차를 타고 뉴잉글랜드 주변에 마트준을 소개했는데, 이 마차는 나중에 터키어 튀르키예어인 "yogurt"로 바뀌었습니다. 터키어는 그 당시 주요 소비자였던 다양한 근동 민족의 이민자들 사이의 언어 프랑카였기 때문입니다.[22]
2012년 1월 24일 조지아주는 "matsoni"에 지리적 표시를 등록하였고, 따라서 "matsoni"에 대한 특허권과 지적 재산권이 조지아주에 주어졌습니다.[13][15][14] 2022년 조지아는 자국 영토를 통해 러시아로의 아르메니아산 "맛순" 요구르트 수출을 금지했습니다.[15][14] 아르메니아에 본사를 둔 회사는 나중에 요거트의 이름을 변경하고 "아르메니아 산 요거트"[14]로 표시하기 시작했습니다.
준비
마트준은 소젖, 염소젖, 양젖, 버팔로젖, 또는 그것들의 혼합물과 이전 생산물의 배양물로 만들어집니다. 요구르트와 유사하게 일반적으로 락트산간균 아시도필루스(원래만 해당), 락트산간균 델브루에키 아종 불가리쿠스 및 스트렙토코커스 써모필루스와 같은 유산균으로 만들어집니다.[11] Lactococcus lactis ssp. cremoris는 matzoon의 특징적인 고점도를 부여하는 다당류를 생산하는 우점성 박테리아 균주로 밝혀졌습니다.[12]
보존
아르메니아 요리에서 맛준은 카마트 맛준을 얻기 위해 변형될 수 있습니다. 전통적으로 옷감에 담긴 매트존을 배수하여 장기 보존을 위해 생산되었습니다. 이후 염장 정도에 따라 가죽 자루나 점토 항아리에 한 달 이상 보관했습니다.[23]
매트준은 버터 생산에 사용됩니다. 그것이 흔들리면 버터밀크와 분리됩니다(아르메니아어: թան, 황갈색). 황갈색은 더 건조될 수 있으며 그 결과 생성된 제품은 초탄이라고 알려져 있습니다.[24]
마트준은 계란, 같은 양의 밀가루와 전분과 혼합하여 타하나를 생산할 수 있습니다. 작은 반죽 조각은 건조한 다음 유리 용기에 보관합니다. 뜨거운 액체에 녹으면서 주로 수프에 사용됩니다.[25]
