사람, 작물, 귀금속, 질병 등을 구세계에서 신대륙으로 이전하고 그 반대의 경우도 컬럼비아거래소라고 한다.

신대륙 작물은 서기 1492년 이전에는 신대륙(대부분 아메리카 대륙)이 원산지였고 그 당시에는 다른 곳에서는 찾아볼 수 없었던 작물, 식량, 그 밖의 다른 것들이다. 이러한 작물들 중 많은 것들이 현재 전세계에서 재배되고 있으며, 구세계에서 다양한 문화의 요리에 필수적인 부분이 되었다. 이 작물들 중 주목할 만한 것은 옥수수, 겨울 스쿼시, 콩 등반 등 삼자매이다.

구세계에 전파

식품사학자 로이스 엘렌 프랭크(Lois Ellen Frank)는 감자, 토마토, 옥수수, 콩, 스쿼시, 칠리, 카카오, 바닐라를 1492년 이전 아메리카에서만 발견되어 사용하다가 컬럼비아 거래소를 통해 다시 구세계로 가져가 그곳의 요리를 극적으로 변형시킨 "마법 8" 성분이라고 부른다.[17][18][19] 프랭크의 [20]말에 따르면

만약 우리가 이 음식들이 본래부터 원산지라는 것을 해체한다면, 그것은 이탈리아인들이 토마토를 가지고 있지 않았다는 것을 의미하고, 아일랜드인들은 감자를 가지고 있지 않았고, 영국 국가 음식인 피쉬와 칩의 절반은 존재하지 않았다는 것을 의미한다. 러시아인들은 감자도 없었고, 감자의 보드카도 없었다. 세계 어느 곳에서도 아시아 요리에는 차일드가 없었고, 카레 등 동인도 요리에는 차일드가 없었다. 그리고 프랑스인들은 바닐라나 초콜릿을 사용하는 과자가 없었다. 그래서 구세계는 전혀 다른 곳이었다.
