와하카(멕시코 오악사카 주의 사진 철자법)는 토마스나 미에스가 공동 설립한 멕시코식 스트리트 푸드를 판매하는 영국의 레스토랑 그룹으로 영국에 13개 지점이 있다.

역사

미어스는 2007년 8월 멕시코 스트리트 푸드를 중심으로 런던 웨스트엔드에 1호점을 열었다.[1] 2008년 10월 런던의 웨스트필드에서 두 번째 와하카가 문을 열었다.[2] 2011년에는 카나리 워프와 소호에 두 개의 지점이 더 생겼고, 와하카는 최초의 이동식 스트리트 키친을 출시했다. 2012년에 그것은 Top One Wahaca Southbank 실험을 열었다. 2015년 9월, 와하카는 맨체스터에 본사를 둔 북서부 지역에 첫 번째 식당을 열었다.[3]

2020년 8월 와하카는 코로나바이러스 대유행으로 인한 영업 침체로 28개 식당 중 10개 식당을 폐쇄한다고 발표했다.[11] 구조조정의 일환으로 다음의 와하카 식당은 영구 폐쇄되었다. 블루워터(켄트), 브리스톨, 브릭스턴(런던), 샬롯 스트리트(런던), 치체스터(런던), 맨체스터, 리버풀, 켄티시 타운(런던), 사우샘프턴, 세인트 폴스(런던) 등이다.[12]

2020년 11월, 난도스의 억만장자 소유주인 딕 엔토벤은 와하카의 모회사인 오악사카 주식회사의 4백만 파운드의 지분을 사들였다. 와하카는 식당 체인에 5백만 파운드를 투입하면서 주주들과 대부업체들이 2천5백만 파운드의 부채를 탕감하기로 합의하는 CVA(Company Responsible Agreement)에 들어갔다.[13][14]

Awards

Wahaca has won awards for its food, design, and sustainability.[15] In 2016, co-founders Mark Selby and Thomasina Miers were voted restaurateurs of the year by Caterer Magazine.[16]

In 2016, Wahaca became the first restaurant group in the UK to be certified as carbon neutral.[17]

Norovirus outbreak

In November 2016, Wahaca restaurants primarily in London, but also in other locations including Manchester, were suspected as the source of a norovirus outbreak leading to 1000 people falling ill, with symptoms including vomiting.[18] In response, Wahaca temporarily closed nine outlets and apologised to those who had been unwell.[19]

Employment rights

In June 2019, Wahaca was criticised for making serving staff pay part of the bills of customers who left without paying. Following a backlash on social media, they changed the policy.[20]
