식이요법비만의 발생에 중요한 역할을 한다. 개인의 선택, 음식 광고, 사회적 관습, 문화적 영향, 그리고 음식의 이용 가능성과 가격 책정은 모두 개인이 무엇을 얼마나 먹는지 결정하는데 역할을 한다.

식이 에너지 공급

1971년부터 2000년까지 미국에서 여성이 섭취하는 하루 평균 칼로리는 335칼로리(1971년 1542칼로리, 2000년 1877칼로리) 증가했다. 남성의 경우 하루 평균 168칼로리(1971년 2450칼로리, 2000년 2618칼로리)가 증가했다. 같은 기간 지방 소비도 증가했지만, 이러한 여분의 칼로리의 대부분은 탄수화물 소비의 증가에서 비롯되었다.[7] 칼로리 소비가 늘어난 것은 주로 "외식 소비, 짠 간식, 청량음료, 피자로 인한 에너지 소비 증가, 비중 확대"가 원인으로 분석된다.[7] 다른 소식통에 따르면 현재 미국의 젊은이들은 탄산음료와 다른 단 음료의 소비가 하루 칼로리의 거의 25%를 차지하고 있다고 한다.[8] 이러한 추정치는 사람의 기억을 바탕으로 하기 때문에 실제 소비되는 칼로리의 양을 과소평가할 수 있다.[7]

패스트푸드

많은 프리패키지 및 레스토랑 음식의 비율은 1970년대 이후 미국과 덴마크 모두에서 증가했다.[7] 예를 들어, 패스트푸드는 1980년대보다 2-5배 더 많다. 에너지-감소 식품의 많은 부분이 에너지 섭취를 증가시키고 따라서 비만의 비율을 증가시킨다는 증거가 있다.[12][13]

육류 소비량

설탕 소비량

설탕이 든 음료(과일 주스, 청량 음료, 과일 음료, 스포츠 음료, 에너지강화된 물 음료,아이스티, 레모네이드 포함)를 더 많이 마시면 전반적인 에너지 섭취가 증가하며 따라서 대사증후군, 비만, 제2형 당뇨병의 위험도 증가한다(비만#병리학 참조).[19][20][21][22] 음식과 음료에 첨가된 설탕을 더 많이 섭취하는 아이들은 과체중이 될 위험이 더 높다.[21][22] 그 자체로, 설탕은 비만과 신진대사 증후군을 일으키는 요인이 아니라, 과식할 때 건강에 좋지 않은 식습관의 구성요소인 것이다.[23] 무료 설탕 섭취량을 늘리거나 줄인 성인은 몸무게를 늘리거나 줄인다.[24]

초가공식품소비량

마찬가지로, 튀긴 음식의 과소비는 인구 수준에서 더 큰 비만 위험과 관련이 있다.[38] 개인적으로는 튀긴 음식 섭취와 체중 증가의 상대적 위험은 유전적 성향에 따라 달라 보인다.[39]

사회정책과 변화

신진대사

일부 비만인 사람들은 거의 먹지 않고 신진대사가 느려서 살이 찐다는 일반적인 견해는 증거가 뒷받침되지 않는다. 평균적으로 비만인 사람들은 보통 체중이나 마른 사람들보다 에너지 지출이 크고 실제로 BMR이 더 높다.[44][45] 늘어난 체중을 유지하기 위해서는 더 많은 에너지가 필요하기 때문이다.[46] 비만인 사람들도 정상 체중보다 얼마나 많은 음식을 섭취하는지를 과소 보고한다.[47] 칼로리미터로 수행된 인간 대상의 테스트는 이러한 결론을 뒷받침한다.[48]
