보라사울

Bora saul

보라사울은 인도 아삼에서 발견된 다양한 찹쌀이다. 아삼과 토착아삼에서 중요한 역할을 한다.[1][2] 비후와 같은 전통 행사 때, 이 다양한 종류의 쌀은 도이, 구르, 크림을 곁들여 먹는다.[3]

보라 사울은 인도 본토에서 소비되는 쌀과 다르며 동남아시아 요리에서 소비되는 찹쌀의 종류에 더 부합한다. 보라 사울의 한 변형은 코라 보라 사울, 즉 검은 찹쌀이다.[4]

보라 사울은 졸판(스낵)과 피타(이나 팬케이크)와 같은 다른 여러 아사메스 요리에 사용된다.[5][6] 삶은 보라 사울은 두부우유, 잡곡이나 설탕을 곁들인 졸판(Jolpan)으로 나온다.[7] 비타를 준비하는데는 물에 젖은 보라 사울이 사용된다.[6][8]

일부 지역 아사메즈 기업가들은 또한 상업적으로 구할 수 있는 쌀을 기반으로 한 알콜 양조물을 만들기 위해 보라 사울을 사용하는 실험을 하고 있다.[9]
